Chickpea Spinach & Artichoke Dip. 🤤 It’s the perfect food for parties OR just snacking on at home with your loved ones (I did the latter).
I developed this recipe when I was watching tv one day and really wanted some warm, creamy spinach dip to snack on. A strangely specific craving, but I was going to do my best to make it happen. Unfortunately, I knew I didn’t have the ingredients for a typical spinach dip on hand. So I scoured through the limited items in my kitchen in hopes of a creative brainwave. It was then that I came across my bulk collection of chickpeas from Costco. (Yes, I use a lot of chickpeas). It was there that this recipe was born.
I love using chickpeas in my meals because they are tasty and versatile. But chickpeas are also highly nutritious; they are high in plant-based protein, fibre, iron, magnesium, potassium, zinc, folate and vitamin A. Therefore, this dip is significantly healthier than conventional spin dips that are made of tons of mayo, cream cheese, and cheese.

Chickpea Spinach & Artichoke Dip
Ingredients
- 1 400ml can chickpeas drained and rinsed
- 1.5 cups (packed) chopped raw spinach
- 3/4 cup plain unsweetened non-dairy milk I used cashew
- 1/2 cup vegan mayo
- 1/2 cup chopped marinated artichoke hearts
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp dried parsley
- 1 tsp garlic powder
- 2 tbsp dijon mustard I used grainy
- 2 tsp olive oil
- 2 tbsp vegan parm optional
- 1/2 cup shredded vegan cheese to top optional
Instructions
- Blend the chickpeas with the non-dairy milk until smooth.
- Add it to an oven-safe dish with the rest of the ingredients (except optional shredded cheese) and mix well.
- Top with the optional shredded vegan cheese.
- Bake in a 400f oven for 15-20 minutes until thoroughly warm and the top is bubbling.
- Enjoy with pita, tortilla chips and veggies!
