Here I am sharing my recipe for crispy, plant-based “parmesan” potatoes. One of my favourite foods as a child were crispy, cheesy, parmesan-coated potatoes. But when I adopted a plant-based diet, I missed them.
However, I recently developed a great replacement that not only tastes very similar to classic parmesan potatoes but, due to the lack of cheese, is much healthier! I use nutritional yeast and a mix of spices as a substitute for the cheese.
If you aren’t sure what nutritional yeast is, it is a non-active yeast that has a nutty, cheesy, savory flavour. It is sold in the form of yellow flakes, granules or powder and can be found in the bulk aisle of most natural food stores. You can also find it here. Many of the brands of nutritional yeast are fortified with B12, which is a vitamin that is lacking in many plant-based diets.

Without further ado, here’s the recipe. It’s super simple and only consists of 7 ingredients! I hope you enjoy.
Crispy Plant-Based “Parmesan” Potatoes
Ingredients
- 7-8 Small Russet Potatoes Scrubbed clean, skin on, chopped into bite size pieces
- 2 tbsp Olive Oil
- 4 tbsp Nutritional Yeast Keep 2 of the tbsp seperated for topping
- 1 tsp Smoked Paprika
- 1 tbsp Dried Parsley
- 1 tsp Salt
- 2 tsp Vinegar White wine or apple cider vinegars work well
Instructions
- Preheat oven to 425F and prepare a parchment-lined baking sheet
- Toss all of the ingredients together in a bowl, except for 2 tbsp of nutritonal yeast
- Add seasoned potatoes to a parchment-lined baking sheet in a single layer
- Sprinkle the remaining 2 tbsp of nutritonal yeast on top of the potatoes
- Bake for 25 minutes, toss, then return to the oven for approximately 20 more minutes
- Remove from the oven when potatoes are soft in the middle and crispy on the outside. Test by piercing them with a fork.
*Note: You can be creative with the spices on these potatoes! Adding 1 tsp of crushed chili flakes (for a little spice) or a few dashes of dried basil would be delicious.
