This recipe for Crispy Roasted Lemon & Garlic Green Beans is a very simple one and doesn’t include any obscure ingredients — you probably already have most of these ingredients in your pantry!
I got inspired to make this recipe when I recently bought some green beans from a vendor at my local farmer’s market. I grew up eating a lot of green beans. Usually they were steamed and topped with butter and salt, which I loved. As I have grown older, I love to instead roast most of my vegetables. I find they develop more flavour this way. With the addition of garlic, lemon, and paprika, this dish is flavour packed, but still tastes fresh. The breadcrumbs also add a nice crunch.
After trying some of these beans, my boyfriend Matt said “wow, I’ve never had beans that tasted like this before!”
I love green beans because they’re so easy to find local in the summer months. Since they’re local, they’re packed full of more nutrients than imported vegetables, as produce tends to lose it’s nutrients in transport. Green beans are especially high in vitamins C and A. Crispy Roasted Lemon & Garlic Green Beans
Ingredients
- 2-3 cups green beans washed and trimmed
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp garlic powder divided
- 1/2 tsp paprika
- 1/2 cup plain panko breadcrumbs or gf breadcrumbs for gf option
- 1 tbsp dried parsley
- salt and pepper to taste
Instructions
- Preheat your oven to 400f
- Add the trimmed green beans to a large bowl. Toss them with 2 tbsp of the olive oil, the lemon juice, 1 tsp of the garlic powder, the paprika, and salt and pepper.
- In a small bowl, combine the breadcrumbs with the remaining 1 tsp garlic powder, the dried parsley, and salt and pepper.
- Add the coated beans to a small baking dish and spread them out evenly. Add the panko mixture evenly to the top. Drizzle the remaining 1 tbsp of olive oil on top.
- Bake for 20-25 minutes until the beans are tender and the topping is crispy and golden brown.
