For Valentine’s Day, I am sharing a simple recipe for Healthy Berry Crumble for Two!
Served up in individual ramekins (like these), these berry crumbles look so cute and are perfect for your Valentine’s dessert! They are also so healthy that you can even eat them for breakfast!
For the sweetener in this berry crumble, I am using LIVA Raw Date Sugar. This sugar is made from 100% dried dates and is typically a 1:1 replacement for white or brown sugar. I find it a little less sweet than conventional sugar, so I sometimes add a little bit more. I love this sugar because it is high fibre, low glycemic, low in calories, good for gut health +balancing blood sugar (to fight cravings). It also contains Vitamin K, E, C, A, B6, 12, selenium, copper, protein, iron, zinc, phosphorus, calcium, potassium, magnesium, omega 3 & 6.
That’s much better than refined white or brown sugar if you ask me.
LIVA is actually giving a great Valentine’s discount: Shop livafoods.ca on Feb 13&14 and get one FREE box of the NEW sachets when you purchase 2 or more canisters of LIVA. Use the Code: LIVALOVA.
I hope you make and enjoy this healthy berry crumble for two!
Recipe for Healthy Berry Crumble
Healthy Berry Crumble for Two
Ingredients
- 1/2 cup quick oats
- 1 1/2 tbsp whole wheat flour
- 1/2 tsp ground cinnamon
- 1 1/2 tbsp LIVA Raw Date Sugar Or brown sugar or maple syrup
- 1 1/2 tbsp Coconut Oil Or vegan butter. Plus more for greasing.
- 2 cups Mixed berries Fresh or frozen – I used frozen
- 1 tbsp cornstarch
Instructions
- Preheat the oven to 350°F, and grease two medium-large ramekins (or a loaf pan if you don't have ramekins) with coconut oil
- To prepare the topping, whisk together the oats, flour, date sugar, and cinnamon in a small bowl. Cut in the coconut oil with a fork (or your hands) until a soft, crumbly mixture is achieved
- To prepare the filling, toss the mixed berries with the cornstarch in a large bowl until completely coated.
- Transfer the filling to the prepared ramekins or pan, and sprinkle evenly with the topping. I used smaller ramekins, so I pressed the topping on pretty firmly and placed the ramekins on a covered baking sheet to protect my oven from any dripping.
- Bake at 350°F for 40 minutes or until the top is slightly crisp and you can see the juices bubbling at the sides of the dish.
- Serve warm or cool.
