This Mexican Inspired Chickpea Salad was one of the recipes that I taught at my recent cooking class at Loblaws. These Roasted Cauliflower Tacos with Garlic Aioli was the other recipe I taught in the class. Together, they make the perfect dinner — Taco Tuesday, anyone?
This chickpea salad was such a hit with my class! If fact, one lady told me that she has never enjoyed chickpeas in the past, but she loved this salad. That’s what I call a success!
Chickpeas are a staple in my diet. I love them because they are not only so versatile (main ingredient in hummus, falafel, and even tasty snacks like these!), but they are high in protein, fiber, and vitamins such as iron and calcium. What’s not to love?
This protein-rich chickpea salad is super fresh-tasting thanks to the parsley and tomatoes, has a subtle tartness from the lime juice, and has some dreamy creaminess from the addition of avocado.
Recipe
Mexican Inspired Chickpea Salad
Ingredients
For the salad
- 2 15-ounce cans chickpeas drained and rinsed
- 3/4 cup red onion finely diced, about 1/2 large red onion
- 1 cup cherry tomatoes quartered
- 1/3 cup parsley chopped (can use Cilantro in place of this)
- 1 avocado ripe and diced
For the dressing
- 1/4 cup olive oil extra virgin
- 2 tablespoons white wine vinegar
- 2 medium limes juiced (about 1/4 cup lime juice)
- 1 teaspoon minced garlic about 2 cloves
- 1 pinch of salt
- 1 pinch of black pepper
Instructions
- In a large bowl, add chickpeas, red onions, cherry tomatoes, parsley, and avocados. Stir together and set aside.
- For the dressing: in a small bowl, add olive oil, white wine vinegar, lime juice, minced garlic, salt and pepper. Whisk until combined.
- Pour the dressing onto the mixed chickpea salad and stir to combine.
- Cover and refrigerate for 15 minutes until chilled, or enjoy immediately.
*Note: If you’re not a fan of chickpeas, you can always swap them out for cooked lentils (green, black, or brown), black beans, or even grains like quinoa!
