This plant-based “egg” sandwich is killer. It is also (not purposely) gluten-free and oil-free! Personally, even before I was vegan, I was never a fan of eggs.
However, this recipe, made from a base of chickpea flour, is now one of my favourite breakfasts (or lunches!). It’s savoury, perfect on a breakfast sandwich, and high in protein! To be honest, it doesn’t taste eggs-actly eggy ๐, but I wouldn’t expect it to.
To make it, I used this chickpea flour from Bob’s Red Mill. When it’s mixed with water and spices, it basically turns into a savoury pancake batter. Stick it in a hot, non-stick pan for 30 seconds on each side, and voila — A great plant-based egg alternative!

Plant-Based “Egg” Sandwich
Ingredients
- 1 cup chickpea flour
- 3/4 cup water
- 1 tbsp nutritional yeast
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Whisk together the chickpea flour, water, and spices in a bowl with a spout until smooth
- The mixture should be slightly thinner than pancake batter
- Heat a non-stick pan over medium-high heat
- Add about 1/3 of a cup of the batter into the hot non-stick pan. Swirl the pan to make the mixture even and thinner.
- After about 30 seconds, flip it. Cook for another 30 seconds.
- Repeat until the batter is gone or store the extra batter in an airtight container in the fridge
- Build your "egg" sandwich however you like. I fold the "egg" pancake in half or quarters and put it on some toasted sprouted grain bread (use gf bread to make it gf) with avocado, spinach, vegan cheese, sriracha, mayo and mustard.
*Note: You can change out the spices to whatever you like! I think that adding cayenne pepper (for spice) or a roasted garlic and red pepper seasoning would be so good! You could also add some black salt, which has an eggy taste, but I have never tried it.
