Crispy Plant-Based "Parmesan" Potatoes

Russet Potatoes
Scrubbed clean, skin on, chopped into bite size pieces

Olive Oil

Nutritional Yeast
Keep 2 of the tbsp seperated for topping

Smoked Paprika

Dried Parsley

Vinegar
White wine or apple cider vinegars work well
Instructions
Preheat oven to 425F and prepare a parchment-lined baking sheet
Toss all of the ingredients together in a bowl, except for 2 tbsp of nutritonal yeast
Add seasoned potatoes to a parchment-lined baking sheet in a single layer
Sprinkle the remaining 2 tbsp of nutritonal yeast on top of the potatoes
Bake for 25 minutes, toss, then return to the oven for approximately 20 more minutes
Remove from the oven when potatoes are soft in the middle and crispy on the outside. Test by piercing them with a fork.
