Crispy Plant-Based "Parmesan" Potatoes

Ingredients

  • 7-8 Small Russet Potatoes Scrubbed clean, skin on, chopped into bite size pieces
  • 2 tbsp Olive Oil
  • 4 tbsp Nutritional Yeast Keep 2 of the tbsp seperated for topping
  • 1 tsp Smoked Paprika
  • 1 tbsp Dried Parsley
  • 1 tsp Salt
  • 2 tsp Vinegar White wine or apple cider vinegars work well

Instructions

  • Preheat oven to 425F and prepare a parchment-lined baking sheet
  • Toss all of the ingredients together in a bowl, except for 2 tbsp of nutritonal yeast
  • Add seasoned potatoes to a parchment-lined baking sheet in a single layer
  • Sprinkle the remaining 2 tbsp of nutritonal yeast on top of the potatoes
  • Bake for 25 minutes, toss, then return to the oven for approximately 20 more minutes
  • Remove from the oven when potatoes are soft in the middle and crispy on the outside. Test by piercing them with a fork.
