Crispy Roasted Lemon & Garlic Green Beans

Ingredients

  • 2-3 cups green beans washed and trimmed
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp garlic powder divided
  • 1/2 tsp paprika
  • 1/2 cup plain panko breadcrumbs or gf breadcrumbs for gf option
  • 1 tbsp dried parsley
  • salt and pepper to taste

Instructions

  • Preheat your oven to 400f
  • Add the trimmed green beans to a large bowl. Toss them with 2 tbsp of the olive oil, the lemon juice, 1 tsp of the garlic powder, the paprika, and salt and pepper.
  • In a small bowl, combine the breadcrumbs with the remaining 1 tsp garlic powder, the dried parsley, and salt and pepper.
  • Add the coated beans to a small baking dish and spread them out evenly. Add the panko mixture evenly to the top. Drizzle the remaining 1 tbsp of olive oil on top.
  • Bake for 20-25 minutes until the beans are tender and the topping is crispy and golden brown.
